Hotcakes anyone?

So, now you have a wonderful  sourdough starter.  You have been making your  sourdough bread every week, but what else can you enjoy?  
 
Hotcakes anyone?  Making sourdough hotcakes (pancakes) is very easy and oh so YUMMY!!!

        So what are you waiting for?  Set your sponge!
As you do with sourdough bread, you need to use your sponge  and replenishing it all at the same time. Take your sponge out and let it warm on the counter for a few hours.  Take out one cup of your sponge and place it in a glass bowl.  To your original sponge, add 1 cup of warm (100*-110) water, 1  1/4 cup of organic unbleached flour.  Mix it well. Cover and place your refreshed sponge back into the refrigerator.

To the 1 cup of working sponge in the glass bowl, also add 1 cup of warm
(110*-110*) water and 1 1/4 cup of organic unbleached flour.  Mix it well.  Cover and place in a warm place (oven with a light on is perfect!) overnight and
dream of the yummy hotcakes you are going to share with your family tomorrow!

Let's get the ingredients for the hotcakes!
        working sponge from the previous night
        2 eggs
        1 tsp kosher salt
        2 TBSP organic minimal processed sugar
        2 TBSP olive oil
        1 tsp baking soda (aluminum FREE)
Lightly coat a frying pan with your own rendered lard, and set it to a high heat. To your working sponge, add the eggs, kosher salt, organic sugar, and olive oil. Mix it well.

Now, take the baking soda and mix it with a small amount of water to dissolve  it.  Add it to the hotcake batter. Watch the reaction!

Take a heaping tablespoon of batter and add it to the frying pan to see if it is hot enough.  Watch it start to 'dry' around the edges, rise slightly, and bubble. Than flip the hotcake over for a minute or two.  Now it is hot enough to make your hotcakes.

Now, the rest is up to you......add 2-3 large spoonfuls of batter per hotcake and eat them while they are hot....don't wait one minute more ENJOY!
